Introduction

Slow-cooked South African tomato smoor with onions, garlic, rosemary, and honey. Great with pap, toast, pasta, or pizza.

Ingredients

Directions

  1. Peel tomatoes: score an “X” on the bottom, dip briefly in boiling water, peel, and remove crowns. Cube.
  2. Brown onions and garlic in oil/ghee; season with salt.
  3. Add tomatoes; simmer 1 hour.
  4. Add rosemary; cook another hour.
  5. Add honey; simmer 15-30 minutes more. Season with pepper/salt. Serve warm.
